Ingredients for Mexican Black Bean Casserole

2 (15 ounce) cans seasoned black beans, drained but not rinsed
1/2 onion, chopped
1 orange pepper, chopped
1 (14 ounce) can diced tomatoes
1 cup salsa
1 teaspoon garlic powder
2 tablespoons cumin
1/2 cup shredded vegan cheese, divided and optional
8 corn tortillas
2 green onions, chopped

Mexican Black Bean Casserole, How to Make

1. Preheat oven to 350 degrees F. In a large bowl, combine beans, onion, peppers, tomatoes, salsa, and other seasonings.
2. In a 9×9″ pan, scoop in about 1″ bean mixture. Sprinkle with a little cheese and cover with a layer of tortillas and repeat.
3. On the top, sprinkle extra cheese and the green onions. Bake for 30-35 minutes. Let cool for a minute before serving.
