Sarah’s sunflower special, How to Make
Step 1Preheat oven to 210°C. Grease a large roasting pan.
Step 2Cut vegetables into 3cm cubes. Place into roasting pan. Drizzle with oil. Sprinkle with curry powder. Season with salt and pepper. Toss vegetables until well coated.
Step 3Add garlic cloves (still in their skin) to pan. Roast for 30 minutes or until vegetables are tender. Place sunflower seeds onto a baking tray. Place into oven under vegetables. Roast for 10 minutes, or until seeds are toasted. Remove garlic.
Step 4Meanwhile, cook pasta in a large saucepan of boiling salted water, following packet directions, until tender. Drain. Return to the saucepan.
Step 5Add vegetables and sunflower seeds to pasta. Toss to combine. Arrange in bowls. Top with coriander. Serve with parmesan.
