Step 1The next day, preheat the oven to 200°C or a woodfired oven to 400°C. Drain the beans and place in a baking dish with the garlic, sage, tomato and oil. Add enough water to cover the beans, then cover the dish with foil. Cut a small hole in the centre of the foil to allow steam to escape.
Step 2Bake in the oven for 1 hour 30 minutes (or in the centre of the woodfired oven for 45 minutes) until the liquid has evaporated and the beans are tender. Season, then drizzle with a little extra olive oil. Allow to cool, then serve.
Keeping a small piece of vine still attached to the tomato enhances the flavour. You’ll need to soak the beans a day ahead.
