Try this twist on ricotta gnocchi with baby rocket added to the mix, then serve with a drizzle of herby tomato vinaigrette.

Sauteed rocket and ricotta gnocchi with tomato tarragon vinaigrette, How to Make

  • Step 1
    Place rocket in a bowl. Cover with boiling water, leave for 30 seconds, then drain and refresh in iced water. Drain again and squeeze very firmly to remove excess water. Finely chop rocket and combine in a bowl with ricotta, parmesan and egg, then season with sea salt and freshly ground black pepper. Gradually add flour and stir to form a mixture the consistency of thick mashed potatoes. You may not need all the flour. On a generously floured work surface and with floured hands, roll a quarter of the mixture into a 2cm-wide log about 40cm long. Cut into 2cm lengths with a floured knife. Repeat with remaining mixture.
  • Step 2
    Bring a large saucepan of water to a simmer and cook gnocchi, in 4 batches, for 1 1/2 minutes or until they float. Using a slotted spoon, place gnocchi in a bowl of iced water to cool, then transfer to a plastic wrap-lined tray.
  • Step 3
    For tomato-tarragon vinaigrette, combine all ingredients in a bowl and season to taste.
  • Step 4
    Preheat oven to 150C. Heat butter in a large non-stick frying pan over medium heat and saute gnocchi, in 3 batches, for 5 minutes, turning until browned all over. Transfer to a tray and keep warm in oven.
  • Step 5
    To serve, add hot gnocchi to tomato-tarragon vinaigrette and toss to combine.
