Cheese and spinach tortilla melts for 2 serves person

These quick and easy tortillas melts are a great lunch idea for those of us who are short on time.

Cheese and spinach tortilla melts, How to Make

  • Step 1
    Combine spinach, onion, feta and cheddar in a bowl. Season with pepper.
  • Step 2
    Preheat sandwich press. Place 1 tortilla in press. Spread spinach mixture over tortilla. Top with 1 tortilla. Cook until golden. Stand for 2 to 3 minutes. Cut into wedges. Serve.

Notes:
These melts make a great work lunch. Simply follow step 1 at home, and divide spinach mixture between 2 snap-lock bags or airtight containers. Refrigerate. Divide tortillas between 2 snap-lock bags. Continue from step 2 immediately before serving. If you don’t have a sandwich press at work, cook tortilla melts at home and reheat in the microwave. Variation: Pack a 95g can of tuna. Drain and add to tortilla with spinach mixture.
