The addition of sugar and spice brings out the natural sweetness of these truss tomatoes, transforming them into a glorious summer side.

Paprika tomato & onion salad, How to Make

  • Step 1
    Use scissors to cut the tomatoes from the vine, leaving tops intact. Slice the tomatoes crossways. Arrange the tomato slices, slightly overlapping, on a large serving plate.
  • Step 2
    Combine the onion, sugar, salt and paprika in a bowl. Add the oil and lemon juice and stir until well combined. Set aside for 25 minutes to develop the flavours.
  • Step 3
    Pour the onion mixture evenly over the tomato. Season with salt and pepper and scatter over the feta. Serve immediately.

Notes:
Persian feta is marinated in a mixture of herbs, spices and olive oil, and has a soft, creamy texture. It’s available from the deli section of supermarkets. If unavailable, use Greek feta instead. Prepare this recipe to the end of step 2 up to 30 minutes ahead. Continue from step 3 up to 15 minutes before serving.
