Paprika tomato & onion salad for person

Step 1Use scissors to cut the tomatoes from the vine, leaving tops intact. Slice the tomatoes crossways. Arrange the tomato slices, slightly overlapping, on a large serving plate.
Step 2Combine the onion, sugar, salt and paprika in a bowl. Add the oil and lemon juice and stir until well combined. Set aside for 25 minutes to develop the flavours.
Step 3Pour the onion mixture evenly over the tomato. Season with salt and pepper and scatter over the feta. Serve immediately.
Persian feta is marinated in a mixture of herbs, spices and olive oil, and has a soft, creamy texture. It’s available from the deli section of supermarkets. If unavailable, use Greek feta instead. Prepare this recipe to the end of step 2 up to 30 minutes ahead. Continue from step 3 up to 15 minutes before serving.
