Penne with peas, feta and lemon for 4 person
Take a midweek trip to Italy with this low-fat, super-fast pasta dish. What’s more, it’s good for you too!
Ingredients for Penne with peas, feta and lemon
- 1 lemon, juiced
- 1 tablespoon olive oil
- 1 garlic clove, crushed
- 375g Barilla Penne Rigate
- 100g snow peas, topped, cut into strips
- 100g sugar snap peas, trimmed, halved
- 1/2 cup frozen peas
- 150g low-fat feta cheese, crumbled
- 1/2 cup mint leaves, chopped
Penne with peas, feta and lemon, How to Make
Step 1Combine 1/4 cup lemon juice, oil and garlic in jug. Season with salt and pepper. Set aside.
Step 2Cook pasta in a large saucepan of boiling salted water, following packet directions, until tender. Add snow peas, sugar snap peas and frozen peas to pasta 2 minutes before end of cooking time. Drain. Return pasta and peas to saucepan.
Step 3Add feta, mint and dressing to pasta mixture. Toss over low heat until well combined. Season with pepper and serve.
