Sushi-style roll-ups for 4 person
Perfect for a picnic or lunch-box, these sushi type omelettes are a fun idea for the kids to try in the kitchen.

Step 1Cook rice following packet directions. Cool slightly. Transfer to a large bowl. Drizzle over the vinegar and fold through the rice. Set aside for 30 minutes to cool.
Step 2Meanwhile, use a fork to whisk eggs and water in a jug. Heat a 22cm (base measurement) non-stick frying pan over medium-high heat. Spray with olive oil spray. Add one-quarter of egg mixture, tilting pan until mixture covers base. Cook for 2-3 minutes or until golden underneath. Slide onto a plate. Cover with foil. Repeat with remaining egg mixture, separating omelettes with non-stick baking paper.
Step 3Place 1 omelette, golden-side down, on a clean work surface. Use wet hands to spread one-quarter of the rice mixture over half the omelette, leaving a 1cm-wide border around the edge.
Step 4Spread one-quarter of the avocado along the centre of the rice. Top with one-quarter of the cucumber.
Step 5Roll up to enclose filling. Repeat with remaining omelettes, rice mixture, avocado and cucumber. Set aside, seam-side down, for 5 minutes. Thickly slice diagonally. Serve with soy sauce.
How to make sushi roll-ups To roll up each omelette, first fold one edge of the omelette over the filling, then carefully roll up so the filling is enclosed.
