Mini goats cheese tartlets for 8 person
These golden pastry puffs are a crowd-pleasing vegetarian delight.
Ingredients for Mini goats cheese tartlets
- 2 tablespoons olive oil
- 2 red onions, halved, thinly sliced
- 65g (1/2 cup) craisins (dried cranberries)
- 2 tablespoons red wine vinegar
- 45g (1/4 cup, lightly packed) brown sugar
- 80ml (1/3 cup) water
- 1 sheet (25 x 25cm) frozen ready-rolled puff pastry, just thawed
- 100g goats cheese, crumbled
Mini goats cheese tartlets, How to Make
Step 1Heat the oil in a saucepan over medium heat. Add the onion and cook, stirring occasionally, for 15 minutes or until golden.
Step 2Meanwhile, combine the cranberries and vinegar in a small bowl. Set aside for 15 minutes to soak.
Step 3Add the cranberry mixture, sugar and water to the onion. Cook, stirring occasionally, for 10 minutes or until the mixture thickens. Season with salt and pepper. Set aside for 1 hour to cool.
Step 4Preheat oven to 200°C. Line 2 baking trays with non-stick baking paper. Use a 6cm-diameter round pastry cutter to cut 16 discs from the pastry. Place the pastry discs on the lined baking trays. Use a 4cm-diameter round pastry cutter to make a 1cm-wide border around the edge of each pastry disc (do not cut all the way through). Use a fork to prick the centre of each pastry disc all over.
Step 5Keeping within the border, spread 1/2 teaspoon of onion mixture over each pastry disc. Top with goats cheese, pecans and thyme. Bake for 12-15 minutes or until golden. Serve.
Time plan tip: Prepare to the end of step 3 up to 1 day ahead. Store the onion mixture in an airtight container in fridge. Continue to the end of step 4 up to 2 hours ahead. Cover and store in fridge. Continue from step 5, 20 minutes ahead.
