Quinoa, Shitake Mushrooms and Adzuki beans vegetarian recipes for people.

Ingredients for Quinoa, Shitake Mushrooms and Adzuki beans

1/2 cup sliced carrots
3 thinly sliced scallions
1/4 cup shitake mushrooms sliced ( slightly crushed oyster mushrooms work well too)
2 cups cooked adzuki beans, without the liquid
1 cup washe’d quinoa
1 tablespoon olive oil
2 cups veggie broth
salt, pepper

Quinoa, Shitake Mushrooms and Adzuki beans, How to Make

Saute veggies until tender. Add broth, beans and quinoa. Bring to a boil. Reduce heat to low and simmer for c. 20 minutes, until liquid evaporates. Add salt and pepper and mix with a fork or wooden spoon. enjoy.
