Here’s a tasty vegetarian lunchbox idea which combines full antipasto flavours with smooth feta cheese.

  • Step 1
    Spread pesto over bread sheets. Arrange rocket in a row along 1 edge of each sheet. Top with eggplant, mushrooms, artichoke and tomatoes. Crumble feta over vegetables.
  • Step 2
    Roll up firmly to enclose filling. Secure rolls with kitchen string. Cut in half and serve.

Mountain bread comes in paper-thin sheets of wheat flour with added grains such as barley, rye, oats and rice. It has a dry, soft texture which also toasts well.
