Antipasto roll-up for person
Here’s a tasty vegetarian lunchbox idea which combines full antipasto flavours with smooth feta cheese.

Step 1Spread pesto over bread sheets. Arrange rocket in a row along 1 edge of each sheet. Top with eggplant, mushrooms, artichoke and tomatoes. Crumble feta over vegetables.
Step 2Roll up firmly to enclose filling. Secure rolls with kitchen string. Cut in half and serve.
Mountain bread comes in paper-thin sheets of wheat flour with added grains such as barley, rye, oats and rice. It has a dry, soft texture which also toasts well.
