Haloumi, zucchini and grape-tomato skewers with basil oil for 16 person

Vegetarian barbecue food has never been easier with these delicious grilled haloumi skewers.

Haloumi, zucchini and grape-tomato skewers with basil oil, How to Make

  • Step 1
    Cook the basil and spinach in a saucepan of boiling water for 30 seconds or until just wilted. Refresh under cold running water. Drain.
  • Step 2
    Place the basil mixture and combined oils in the bowl of a food processor and process until smooth. Transfer to an airtight container and place in the fridge for 8 hours to develop the flavours.
  • Step 3
    Preheat a barbecue grill on medium-high. Thread a piece of zucchini, haloumi and a tomato onto each skewer. Lightly spray with olive oil spray.
  • Step 4
    Cook the skewers on the grill for 4 minutes each side or until golden brown and cooked through. Arrange skewers on a serving platter and serve immediately with the basil oil.

Notes:
You can prepare this recipe to the end of step 2 up to 4 days ahead. Store in an airtight container in the fridge. Continue from step 3 just before serving. You will need to soak 16 bamboo skewers in cold water for 1 hour.
