Step 1Wash a 4 cup-capacity jar and lid in hot soapy water. Rinse in hot water. Drain upside-down until completely dry.
Step 2Pat olives dry with paper towel. Combine olives, lemon rind, thyme, chilli flakes, vinegar and oil in a glass or ceramic bowl. Spoon into prepared jar. Seal. Refrigerate for at least 1 week for flavours to develop.
