Spicy fried eggplant with sesame & chilli for 6 person
A sensation on tables across the world, Sichuan cuisine is seriously hot. Try this dish as part of a banquet at home.
Ingredients for Spicy fried eggplant with sesame & chilli
- 1 1/2 tablespoons malt vinegar
- 1 1/2 tablespoons sesame oil
- 1 1/2 tablespoons brown sugar
- 1 1/2 tablespoons soy sauce
- 1 1/2 tablespoons hot chilli sauce
- Peanut oil, to shallow-fry
- 1 large eggplant, quartered lengthways, thinly sliced
- 1 tablespoon sesame seeds, toasted
- Thinly sliced fresh
Spicy fried eggplant with sesame & chilli, How to Make
Step 1Stir the vinegar, sesame oil, sugar, soy sauce and chilli sauce in a small bowl until the sugar dissolves.
Step 2Add enough peanut oil to a large deep frying pan to come 2cm up the side. Heat over high heat. Cook one-third of the eggplant for 2 minutes each side or until golden. Transfer to a plate lined with paper towel. Repeat, in 2 more batches, with remaining eggplant, reheating oil between batches.
Step 3Arrange the eggplant on a serving plate. Drizzle over the dressing and sprinkle with the sesame seeds and chilli.
Serves 6 as part of a banquet.
