  • Step 1
    Place capsicum, tomato, cucumber and garlic in a blender and whiz until smooth. Pass mixture through a sieve, discarding solids, then season with salt, pepper and sugar to taste. Stir in vinegar and oil. Toss with salad just before serving.

Sherry vinegar is available from delis and gourmet shops; substitute red wine vinegar.
