Sweet potato sacks, How to Make

  • Step 1
    Preheat oven to 180°C. Line a baking tray with non-stick baking paper. Cut the sweet potatoes in half crossways. Place, cut-side down, on the lined tray. Spray with oil. Bake for 1 hour or until the flesh is soft. Set aside for 15 minutes to cool.
  • Step 2
    Scoop out two-thirds of the flesh from each potato half to create a shell. Transfer to a bowl. Use a spoon to coarsely mash. Place the shells back on tray. Push down to scrunch them slightly.
  • Step 3
    Heat oil in a frying pan over medium-low heat. Add cumin, shallot and beans, and cook, stirring, for 2 minutes or until beans are bright green and tender crisp. Add to the mash. Stir in cottage cheese and half the parmesan. Season with salt and pepper.
  • Step 4
    Divide the mixture among the shells. Top with the remaining parmesan. Bake for 15-20 minutes or until golden.

Notes:
Cooks tip: Use short, fat sweet potatoes to get the best shapes for the sacks. To get all the dirt off the sweet potatoes, use a clean, soft brush to scrub it away, or fill the sink with cold water and wash the sweet potatoes in there. Use a spoon to scoop the flesh from the sweet potato, but be careful not to break the skin.
