Beans with almond dukkah, How to Make

  • Step 1
    Preheat oven to 200ºC. Place the bread on a baking tray. Bake for 10 minutes or until light golden. Set aside to cool slightly. Break into small pieces.
  • Step 2
    Meanwhile, to make the almond dukkah, stir the almonds in a large frying pan over medium heat for 2-3 minutes or until lightly toasted. Transfer to a bowl. Cook sesame seeds in the pan, stirring, for 2 minutes or until lightly toasted. Add coriander and cumin. Cook, stirring, for 30 seconds or until aromatic. Transfer to a bowl. Finely chop the almonds. Stir into sesame mixture. Season with salt and pepper.
  • Step 3
    Cook the beans in a saucepan of salted boiling water for 2-3 minutes or until bright green and tender crisp. Drain.
  • Step 4
    Place bread, orange rind and 2 tablespoons of the dukkah in a bowl. Season with salt and pepper. Drizzle over the oil. Toss to combine.
  • Step 5
    Place the beans on a serving platter. Sprinkle with the bread mixture.
