Orange and beetroot chopped salad, How to Make
Step 1Place oil and orange juice in a screw-top jar. Season with salt and pepper. Secure lid. Shake to combine.
Step 2Remove outer leaves and core from lettuce. Separate leaves. Wash and pat dry with a tea towel. Roughly chop. Place lettuce, orange, beetroot, carrot, walnuts and parsley in a bowl. Add dressing. Toss to combine. Serve.
Serves 6 as a side.
