Cherry tomato gratin for 4 person
Inspired by the cuisine of Campania, this dish combines sweet tomato and milky mozzarella.

Step 1Preheat oven to 180°C. Grease two 500ml (2-cup) capacity ovenproof dishes with melted butter.
Step 2Place the milk in a small saucepan over medium heat. Bring to a simmer. Transfer milk to a heatproof jug. Wipe the pan clean.
Step 3Melt butter in the pan over medium-high heat. Cook the flour, stirring, for 1 minute or until the mixture bubbles. Remove from heat. Gradually add warm milk, whisking constantly with a balloon whisk until smooth. Place pan over medium heat. Cook, stirring constantly, with a wooden spoon for 2 minutes or until sauce thickens. Stir in the nutmeg and half of the mozzarella. Season with salt and pepper.
Step 4Place tomatoes in prepared dishes. Top with cheese sauce and remaining mozzarella. Bake for 30-35 minutes or until golden.
Serves 4 as a side.
